When Mouri saw the devastation, he strongly felt that he needed to do something and discussed recovery work with fishermen and farmers. He started the Akiu Winery in 2015 with the idea of promoting Terroirage Tohoku. Terroirage is a word coined from terroir, which means region, and mariage, which means pairing food and wine in French. He uses produce brought directly from producers, cooks them at his restaurant, and pairs the food with wine. He also organizes food tours for people who want to enjoy food from Tohoku and nurtures next generation winemakers.

震災により壊滅状態になった地域を見て、「これは何とかしないといけない」と想い、2015年に仙台秋保醸造所が誕生。気候風土や人の営みを意味する「テロワール」と食とお酒のペアリング「マリアージュ」をかけた造語、「テロワージュ東北」という看板を掲げ、生産者から直接仕入れた食材をそのままお店で調理し、ワインと嗜んでもらう、まさに東北の食をまるごと味わう体験ツアーなどを進めると共にワインの担い手育成にも力を注ぐ。
